Pan fried chicken breasts: cut each breast fillet lengthways through the thickest side and butterly open. Pound lightly to fltten the breast to an even thickness. Rub generously with chicken spice. Preheat a heavy based fry-pan over high heat. Add +- 3 t(45ml) canola or sunflower oil. Pan-fry breasts until done. Serve with chips and a salador top with onion, tomato and lettuce and serve in a fresh breadroll to make a chicken burger.
