1kg(2.2lbs) chicken leg quarter, 175ml(5.92fl.Oz) mama sita's bacolod style inasal marinade 1:1 proportion of annatto seeds to cooking oil for basting. 1. Marinade chicken for at least 3 hours. Massage every hour for better penetration of flavors. Overnight marination is advisable for better absorption of flavors. 2. Heat annatto seeds and cooking oil together until the color diffuses. Use as baste. 3. Grill until chicken is cooked. Shake well before using.
