Kare Kare Recipe: 1 pouch (57g) Mama Sita's Peanut sauce (Kare Kare) Mix dissolved in 1 cup (250ml) broth, 1-1/2 kg oxtails cut into 1-1/2 length, 8 cups water, 1tsp minced garlic, 1 pc sliced onion, 7 pcs pechay (bok choy leaves), 6 pcs sitaw (long green beans) - cut into 2 length, 1 pc eggplant sliced into 1/2 length, 1 tbsp cooking oil, bagoong (sauteed shrimp paste). Boil oxtail in water. Lower the heat and simmer until meat is very tender, adding water as needed, leaving about 1-1/2 cups broth. In a heavy saucepan, saute garlic and onion in oil. Add Oxtail, stir fry and pour in dissolved Mama Sita's Kare-Kare Mix. Add the remaining broth. Stir and Simmer until sauce thickens then add the eggplant and long green beans. Simmer for 3 minutes more stirring occasionally. Lastly add pechay (bok choy leaves) and simmer for 2 minutes or until vegetables are done. Serve hot with bagoong (Sauted Shrimp paste) and rice. Cooking Variation: Pressure cook 1/2 kg oxtail in 3 cups water for 45 mins and proceed to cooking procedures 2 to 4 as mentioned above.
