1. Boil oxtail in water. Lower the heat and simmer until meat is very tender, adding water as needed, leaving about 3 cups broth. <br/> 2. Increase the heat, add eggplant and long green beans. Cook for 2 minutes. <br/> 3.In a bowl, combine mama sita's stew base mix, peanuts butter and 1 cup broth. Mix till smooth. <br/> 4. Add this mixture into the simmering oxtail, continue cooking until sauce thickens. Add peachy ( bok choy leaves) and cook for 3 mins. Add salt to taste. Serve hot with rice and bagoong ( sauteed shrimp paste).
